Charlotte Charente hails from the wonderful, gastronomically rich Bordeaux region of northwestern France, which includes the provinces of Charente, Dordogne, and Gironde. The region is famous for its red wine, Cognac, and the highly touted species of black truffle from the Périgord. This is my version of a local specialty called Plessis Charente. I discovered this dessert in a small restaurant in Sainte, just a few miles from the better-known town of Cognac.
