While this presentation is elegant, it is admittedly time-consuming as well. However, the teardrop shells can be made up well in advance during a slow time and, stored properly, will keep for weeks. When the shells are made ahead, it is best to leave the plastic strips attached until serving time. Even the mousse fillings can be prepared up to three days before serving if they are kept, well covered, in the refrigerator. Other ways to save time are to make only one flavor of mousse and use
