This dessert evolved from one of the most popular cakes I make: Lemon Chiffon Cake. Although the filling does contain cream, Citrus Cream with Pink Grapefruit and Orange is decorated with fresh fruit rather than all of the whipped cream used in icing the chiffon cake. While that is not quite enough to qualify it for the Light Dessert chapter, it’s at least a step in the direction of the public’s growing health consciousness.
