Method

  1. In an oversized mixing bowl, sprinkle the gelatin over the cold water and set aside to soften.
  2. Make sure the melted chocolate is warm but not hot. Quickly stir the chocolate into a small portion of the filling base to temper it and prevent lumps. Then, still working quickly, add this mixture to the remainder of the filling base.
