Mascarpone produces a smooth, rich sherbet. If you are not making your own mascarpone, be certain to use a high-quality product, or the cheese may separate in Step 2 or during churning.

Method

  1. Place the water, honey, sugar, and lemon juice in a saucepan. Heat, stirring, until the sugar is dissolved. Let cool at room temperature.
  2. Beat the mascarpone cheese for 1 or 2 minutes or until smooth. Add the crème fraîche and mix to combine. Gradually incorporate the syrup into the cheese mixture.
  3. Process in an ice cream freezer following the manufac
