This is a delicious tea cake known as Mjuk Pepparkaka in Sweden. It is one of my favorite recipes to make all year, but is especially nice at Christmas. Color Photo 112 shows the cakes baked in Flexipan No. 1777 rather than the traditional rectangular pans specified in the recipe. A doily was used to create the powdered sugar design on the tops. The smaller cakes should be baked at 375°F (190°C). They make perfect holiday gifts for friends, especially paired with the miniature Lemon
