It seems as if every pastry chef has his or her own version of Bûche de Noël (the French translation of Yule, or Christmas, log). It is customary to cover the logs with a rough coat of chocolate buttercream to simulate tree bark. My rendition is not only iced with chocolate buttercream but also covered with layers of marzipan and dark chocolate. This combination both looks and tastes good and prevents the sponge cake from drying out.
