Pastillage is also known as gum paste, from the time when a vegetable gum such as gum tragacanth was used in place of gelatin. This sugar paste is perfectly suited for making show and display pieces and other decorative items. Some artists prefer pastillage over marzipan as a canvas for cocoa paintings.
