Pâte de fruit is a French confection with a pleasant, chewy, jellylike consistency. It contains few ingredients, just pureed fruit and/or fruit juice and sugar. The mixture is cooked, poured into a square mold, and left to set and jell. The candy becomes firm due to the natural pectin in the fruit in combination with the cooked sugar.
