It seems that all caramel decorations make a big impression, but this simple space-age spiral has got to be at the top of the list. It never ceases to amaze guests that sugar can be so flexible as they watch it bounce up and down above the plate when it is presented; most of the time they cannot resist trying this for themselves, pulling on the bottom with their fingers or a spoon.
