Sugar shards are most appropriate for use on desserts that are assembled à la minute because if prepared correctly, the shards will be as thin as spun sugar and will not hold up for any length of time in a humid atmosphere. They cannot be used on anything that will be refrigerated for more than just a few minutes, or they will collapse. If stored in an airtight container with a desiccant, the shards can be made up days in advance.
