This version of Joconde yields two quite thin but elegant-looking sheets, which means you have little leverage in spreading the batter. Care must also be taken when baking the sheets because a hot oven is essential and, as thin as they are, they can overbake quickly. Watch them carefully while they are in the oven. If you do not mind slightly thicker sheets, use Joconde Base II, which is a bit easier to work with.
