This decorated sponge sheet uses the technique applied in making Chocolate with Wood Grain. Instead of dark chocolate on a white chocolate background, here the pattern is created using cocoa paste and Joconde sponge base. You will need one or two wood-graining tools.

Ingredients

  • ¾ cup (180 ml) water

Method

  1. Gradually stir the water into the cocoa powder, mixing until you have a smooth, thin paste; it should be pourable but not runny. If necessary, pass the paste through a fine mesh strainer. Let stand at room temperature for 30 minutes. Check the consistency of the paste and add more water if necessary.
