Ginger is rarely crystallized in the professional bakeshop, although the process is quite easy and not time-consuming. As with many homemade foodstuffs, which are free from artificial ingredients, such as coloring, bleaching, and preserving chemicals, the finished product does not look like the familiar commercial product. This crystallized ginger has a much darker color than the commercial golden or tan product you buy.
