  1. Combine the water, sugar, and glucose or corn syrup in a saucepan and bring to a boil. Remove from the heat and set aside to cool slightly.
  2. Cut the white chocolate into small pieces so it will melt quickly and evenly. Place in a bowl over a bain-marie and make sure the water is simmering, not boiling. Stir the chocolate constantly until it is melted, never lett
