The fiery spice blend of Jamaica, known as jerk, radiates as much aroma as heat. Although macho jerk jerks may crave the fiery challenge, it’s the characteristic fragrance of allspice and thyme that you want to capture in this hearty one-pot meal. Pork ribs (use country-style for more meat, less bone) are layered with sweet potatoes, jerk seasoning, and brown sugar.
