These coconut macaroons have a crisp exterior and a soft, chewy center. For an interesting variation, fold 1 tablespoon finely grated lime zest into the beaten whites with the shredded coconut.


  • Nonstick cooking spray
  • 3 large egg whites, at room temperature
  • ¼ teaspoon cream of tartar


  1. Preheat the oven to 325°F (165°C). Line 3 baking sheets with parchment paper and lightly spray the paper with nonstick cooking spray.
  2. In a clean large bowl, combine the egg whites and cream of tartar. Using a mixer on medium-high speed, beat until the
