These cookies are reminiscent of brownies in texture. With the addition of dark chocolate icing and candied orange peel, they are elevated to the kind of dessert served in a fine restaurant.

  • ½ cup ( oz/75 g) all-purpose flour, plus more for dusting

Method

  1. In a bowl, whisk together the ½ cup flour, the cocoa, baking soda, and salt. Place about three-fourths of the chocolate and the butter in a heatproof bowl set over (but not touching) barely simmering water. Heat, stirring frequently, until the chocolate is completely melted and smooth, 4–5 minutes. Remove the bowl from the heat and let cool to lukewarm, about 15 minutes.
