Old school, but a really delicious treat. This savoury pie is good on its own, served as a side dish with barbecued meats or featured on a buffet platter. It can be served straight from the cast iron pan, rustic and yummy.
In a medium saucepan, melt the butter over medium heat. Add the olive oil, onion, thyme and garlic and cook slowly, stirring with a wooden spoon, until the mixture becomes light golden in colour (about 5 minutes). Add the milk, water, cornmeal and salt and continue cooking over low heat until the mixture starts to thicken, about 10 minutes.
Remove saucepan from heat and add the Parmesan
