This is one of the most unusual recipes I have ever crafted for a seafood menu, and the result was uniquely delicious. The richness of the smoked oysters elevates the buttery flavour of the scones, with a hint of saltiness from the bacon. Note that the recipe has no added salt because the bacon contributes plenty. The scones perfectly complement a seafood dish like a cioppino, smoked salmon or any grilled fish.
