I am passionate about making shortbread—they are the perfect recipe to play with flavours. If you maintain the same ratio of dry ingredients to butter you can just play with different herbs and spices. This particular shortbread is buttery with a hint of thyme, and delivers a spectacular punch of bacon and cheese flavours. Delicious on its own, it perfectly pairs with a cheese or charcuterie plate.
