The nutty aroma of brown butter, with its light caramel tones, is a magical addition that will enhance the flavours of many recipes. In a soup, mashed potato or cookie recipe, the addition of brown butter adds a unique extra layer of flavour.

Method

In a medium saucepan, melt the butter over low heat. As the butter starts to melt, it will begin to foam and the water content will start to evaporate. The melting butter will change to a light golden colour and browned milk parts will start dropping to the bottom of the saucepan.
