Combining the natural sweetness of these heirloom carrots with a “bath” of butter allows their authentic flavour to shine through. To preserve even more of that authenticity, I suggest leaving the peel intact. I have never peeled carrots. It is not necessary, and it creates unwanted food waste. Just give them a nice wash—the peel gives them a beautiful rustic look.
