I’ve always loved the rustic appeal of fudge. With a texture somewhere between caramel and fondant, it’s a great platform for creativity. Adding some cardamom to this recipe brings an aromatic depth to the bright flavour of the green apple.

Ingredients

Apple Sauce

  • 3 green apples, peeled, cored and diced into ¼-inch (0.6 cm) cubes
  • ¼ cup (60 mL) softened unsalted butter

Method

For Apple Sauce

In a medium saucepan, cook the diced apple, butter, brown sugar, cardamom and salt over low heat, stirring from time to time. Cook for about 15 minutes, until the texture turns into a compote. Set aside in the refrigerator until needed.
