My maternal grandpa Hans, who was born in Berlin, called these delicious, easy-to-make cookies “schneckennudels.” We would bake them on wintery days and enjoy them with hot chocolate. Grandpa Hans knew his cookies. On the other hand, he also loved eating cold spaghetti with strawberry jam.
In an electric mixing bowl with the paddle attachment, blend together the sugars, flour, salt, baking soda and cornstarch. Add the egg, egg yolk and brown butter and mix on low speed until the dough comes together.
Roll the dough into walnut-size balls and place on a parchment-lined baking tray. Freeze for 30 minutes.
