Method

In an electric mixing bowl with the paddle attachment, mix the butter on low speed until soft and creamy. Use a rubber spatula to scrape down the sides of the bowl.

Add the smoked salmon, chives and black pepper to the soft butter and mix for 1 minute.

Transfer the butter to a piece of 20 × 10–inch (50 × 25 cm) parchment paper, then roll into a log about 2 inches (5 cm) in diame
