This reworked version of Bananas Foster is a play on the flavours of a peanut butter and jelly sandwich. It’s both whimsical and yummy. It’s also versatile—I use it on top of vanilla ice cream, pancakes and French toast!
In a large skillet, melt the butter over medium heat. Stir in the brown sugar, orange zest and bourbon. Once the mixture starts to boil, reduce heat to low, add the banana halves and continue cooking for 3 minutes. Add the chopped peanuts and continue cooking until the bananas are slightly soft, about 1 more minute.
In a small bowl, mash together the raspberries and granulated sugar.
