The key to great-tasting banana bread is ripe—but not overly ripe—bananas. If the bananas are too ripe, the flavour will be bitter. In this recipe, the addition of orange and chocolate deliciously complement the rich banana flavour.
In a medium bowl, combine all the dry ingredients and stir with a whisk.
In an electric mixing bowl with the paddle attachment, mash the bananas on low, then add the orange zest, vegetable oil, orange juice, vanilla extract and beaten egg.
