Lemon and chocolate are not a flavour combination that you often see. This truffle recipe was inspired by my time in Paris, working at the world-renowned La Maison du Chocolat, Rue du Faubourg Saint-Honoré. Every day we would whip up some of the most delicious chocolates, this chocolate lemon truffle among them.
Take 1 lemon at a time and grate the skin of the lemon with a sugar cube. The sugar cubes will absorb the oil of the lemon skin as well as the zest.
In a medium saucepan, add the whipping cream and milk. Bring to a boil over medium heat, then remove from heat and whisk in all the sugar cubes. Stir well until the sugar is dissolved.
Place a double boiler over low heat. Add 1¼ cup
