Chao tom, shrimp mousse grilled on sugarcane, is one of the most distinctive dishes in Vietnam. Talk about a dazzling contrast of flavors and textures, chao tom has it all: soft shrimp mousse and crispy, dulcet sugarcane. You don’t really eat the cane so much as chew on it, releasing sweet juices that balance the saltiness of the shrimp. Fresh sugarcane is available in most major supermarkets.
