Here’s a Southeast Asian twist on Western hard-cooked eggs. If you’re familiar only with the mayonnaise and mustard treatment that hard-boiled eggs receive in the West, the vibrant dipping sauce of chile, lime juice, and fish sauce will come as a revelation. The eggs are roasted over a low flame on the grill instead of being boiled. This particular recipe was inspired by a street vendor in Saigon, but I’ve seen similar preparations in Thailand and Singapore.
