Sometimes spelled escalibada, escalivada is a Catalan grilled vegetable salad. (Escalivar means, in Catalan, to cook in hot ashes.) At a minimum, the vegetables would include onions, red bell peppers, and eggplant, with a generous drizzle of fruity Spanish olive oil. A more elaborate version might include leeks, scallions, celery, and tomatoes, topped with a proper vinaigrette.
