Here’s a North American twist on a traditional Moroccan salad. Moroccans would fry the zucchini, but I like the robust flavor imparted by grilling. In Morocco it’s customary to serve sixteen to twenty different salads at one time. Try matching this with the Moroccan Eggplant Salad and the Armenian Grilled Eggplant, Tomato, and Pepper Salad.
