Here’s the perfect way to use up leftover chicken or any grilled chicken. The tangy flavors of tomato, cilantro, and lemon juice make this salad particularly refreshing in the summer.

To be strictly authentic, prepare the salad with a spice mix called chaat masala. The mix owes its tartness to the addition of amchur powder (ground green mango) and its sulphury flavor to a mineral called black salt. Chaat masala can be bought ready-made at an Indian grocery store
