It’s hard to imagine a Korean meal without this refreshing salad of crunchy chunks of daikon radish emblazoned with chile powder, vinegar, and garlic. Daikon is a succulent Asian radish that looks like our white (icicle) radish but is much longer and thicker; it has a moist, crisp flesh. Look for it at Asian markets, natural foods stores, and many supermarkets. In a pinch, you could use regular red radishes.
