There are probably as many versions of this colorful salad as there are Turkish cooks to make it. The basic ingredients are tomatoes, bell peppers, and onions. Here’s a more elaborate version of çoban salatasi that’s bursting with Anatolian freshness. Serve it as a prelude to any of the Turkish kebabs in this book.
