This curious salad looks a little like green spaghetti. Actually, it’s made with long, thin, noodlelike slivers of cucumber. (The easiest way to cut these is on a mandoline or with the julienne disk of a food processor.) Cucumber salads are just about universally served with barbecue. But what better way to relieve the heat of the fire and the day than with a salad that’s as cool as the proverbial cucumber?
