Variations on these delicate kebabs are to be found throughout Southeast Asia. Coriander and sugar may seem like odd flavorings for beef, but the combination is brilliant. (After all, we North Americans slather sugar-based barbecue sauces on brisket and ribs!)

Ingredients

  • pounds boneless beef sirloin or top round
  • 2 stalks lemongrass, trimmed and cut into ¼-inch slices, or 2 strips lemon

Method

  1. Place the steaks flat on a cutting board and cut them crosswise into long, thin strips; each should be about inch thick, 1 inch wide, and 4 to 5
