Kufteh, aka kafta, kofta, and kefta, generally refers to the grilled ground lamb kebabs or meatballs popular throughout the Arab world. But in Bulgaria, the term describes a meat patty similar to a hamburger. The lamb used in Muslim countries gives way to ground pork and veal in Bulgaria—an exceptionally flavorful combination of meats. Kufteh and kebabche (the same mixture formed into a sausage shape) are popular enough to qualify as the national snack in
