Dried shrimp aren’t particularly popular in North America—which is a shame, because their sweet, briny flavor is delectable—but they turn up widely in Africa, Asia, the Caribbean, and Brazil. Brazilians, in fact, boast a dish very similar to this one, a stew based on dried shrimp and peanuts called vatapá, from the state of Bahia in northern Brazil. If you can’t find dried shrimp, use fresh ones.
