Chorizo Grilled Mushrooms

Mushroom caps grilled with chorizo, garlic, and olive oil are a popular Spanish tapa—so popular, in fact, that there’s a tapas bar in Madrid, the Mesón del Champiñón, that serves this and only this dish.
