Most Westerners don’t associate potatoes with such Asian seasonings as ginger and soy sauce, but the combination is really quite pleasing.
Place the soy sauce, sesame seeds, garlic, and scallions in a small bowl and stir to mix.
Cut 4 pieces of heavy-duty aluminum foil, each 14 by 8 inches. Place a piece of foil, shiny side down and narrow edge toward you, on a work surface. Smear a tablespoon of the butter in the center of the bottom half of the foil rectangle (the half closest to you).
