Torshi refers to a family of pickled vegetables found throughout Central Asia, especially in Afghanistan, Iraq, and Iran. Obviously, the formula varies from country to country, but the basic recipe includes carrots, celery, cauliflower, and turnips or cucumbers cured in vinegar, salt, and sev gundig (black onion seeds found in Middle and Near Eastern groceries).
