Enjoyed over a huge area, including China and Southeast Asia, this sauce is simplicity itself. It contains only two ingredients: hoisin sauce (a dark sweet sauce made from soybeans) and chile sauce. There are lots of options for the latter: I like a Thai chile sauce, like Sriracha, but almost any good-quality bottled chile sauce will do. You can increase or decrease the proportion of chile sauce according to the intensity of the sauce and your tolerance for heat. Serve this sauce with satés
