Here’s a hawaij that’s quick to throw together. It requires no toasting. If you add salt to the hawaij that will make it a North American–style rub.

Method

Combine the pepper, cumin, turmeric, salt (if using), and cardamom in a jar, twist the lid on airtight, and shake to mix. The rub can be stored away from heat and light for at least 6 months.
