Sesame is one of the defining flavors of Korean cuisine. In this recipe toasted sesame seeds are combined with salt, pepper, and hot red pepper flakes to make an uncommon seasoning for grilled meats and seafood.
Place the white sesame seeds in a dry skillet and cook over medium heat until toasted and lightly browned, about 3 minutes, shaking the pan to ensure even cooking (do not use a nonstick skillet for this). Transfer the toasted sesame seeds to a bowl and let cool.
Stir the black sesame seeds, salt, pepper, and hot pepper flakes (if using) into the toast
