If you are pressed for time and can’t toast and grind whole spices, here’s a garam masala you can make in just a couple of minutes.
Combine the cumin, coriander, pepper, cardamom, ginger, cinnamon, cloves, and nutmeg in a jar, twist the lid on airtight, and shake to mix. The garam masala can be stored away from heat and light for at least 6 months.
