Curry butter is easy to make. It’s particularly well suited to seafood. Freeze a batch and you’ll always have some on hand so you can throw a quick dinner together.
Ingredients
8tablespoons (1stick) salted butter, at room temperature
Melt 2tablespoons of the butter in a small saucepan over medium heat. Add the shallots, garlic, and curry powder and cook, stirring often, until the shallots are soft but not brown, about 3 minutes. Let the curry mixture cool completely.
