Ketjap manis (spiced, sweet soy sauce) is Indonesia’s national table sauce. It is an essential ingredient in marinades and is the traditional accompaniment to Indonesian satés. Cooks at the famous Sunda Kelapa fish house in Jakarta use this ketjap butter as a baste for grilled fish and seafood. If ketjap manis is unavailable, or you don’t have the time to make it, combine equal parts soy sauce and molasses and add a half teaspoon of ground coriander.
