A simple tomato salad dressed with a drizzle of extra virgin olive oil, a sprinkle of crushed sea salt and garnished with chopped fresh basil is so good.

Slice the tomatoes and arrange on a serving dish. Vinaigrette dressing is often used on tomato salad but I prefer just oil as the tomato juices balance the oil; if they lack flavour add some lemon juice. After dressing, cover and leave
